Food Prep Post
I often take some time on Sundays to prep some meals for the week, usually things I can have easily for lunch. This week, Monday is a holiday (Martin Luther King Jr. Day), so prep happened today instead!
On the menu for this week were two fairly simple recipes: Muffin Tin Meatloaves, and Green Chicken Sliders. Since this is my first blog post, there aren't a bunch of pictures of my cooking process, just the final product!

First up is the Muffin Tin Meatloaves

I changed it slightly in the following ways: I used 2 lbs of lean ground beef (instead of 1.5 lbs); instead of grated zucchini, I used a half cup of chopped frozen spinach (warmed in microwave); I added 2 mushrooms, chopped very finely; I added 2 tbsp of ricotta cheese; finally, I added a bunch of different seasonings that I like in addition to the ones listed in the recipe! My recipe churned out 22 meatloaves.

Here's how mine turned out:
Second was the Green Chicken Slider:
2 lb Extra Lean Ground Chicken
1 tsp Oregano (dried)
3/4 tsp Sea Salt
2 cups Broccoli (very finely chopped)
1 tbsp Avocado Oil
1/4 cup Shredded Parmesan Cheese
1 tsp Garlic Seasoning
1 tsp Onion Seasoning
Directions:
- Combine all ingredients in a bowl and mix well. Form the mixture into
even sliders, about 3 inches in diameter, and set aside. - Preheat grill to medium heat.
- Cook the sliders for about 8 to 10 minutes per side, or until cooked through.
Serving Size: One serving is equal to two sliders.
More Carbs: Serve on a bun or on top of rice.
Topping Ideas: Mustard, cheese, pickles, tomato, lettuce, onion, avocado, sour cream or plain Greek yogurt.
Leftovers: These keep well in an airtight container in the fridge up to three days or freeze for up to three months.
I'm not going to provide nutrition facts, as that all depends on the products/brands you end up using. However, a serving is going to be about 4 carbs and around 220 calories.
